Chicken Rollatini and Oatmeal Craisin Chocolate Chip Cookies
I have been cooking. I just have not have a chance to blog. I finally typed up all the recipes for the last few days. They are posted on bonappetitmom recipes page. The photos are posted on Instagram. I have watched chefs prepare stuffed chicken breast. it always contains cheese and is sauted in butter. I wanted to make a figure friendly version of stuffed chicken breast. I decided to use frozen spinach and bake the chicken breast instead of saute. I also watched chefs use crackers as topping. I crushed up a few butter crackers and mixed it with parmesan cheese. I whisked up an egg with a splash of milk. I flattened the chicken breast and put in the spinach and rolled it up. I then dredged it in the crumb mixture, then in the egg mixture and back in the crumb mixture. I placed it on a cookie sheet and baked it for 35 to 40 minutes. It was yummy. I also made whole wheat cous cous with veggies. I must admit I still like the original cous cous better. I do not bake. Except for brownies and sometimes cookies. I had an oatmeal cookie mix that I decided to make with my own addition of cranberries and chocolate chips. They went over well and they were a big hit in New Paltz. Stay safe my fans and Bon Appetit.
