Ramps 2
Yesterday I went to New Paltz to pick up my daughter from college. We packed up the car, and set out on our journey home. But before I left New Paltz, I needed to make a stop. I went to the chocolate shop in town to pick up ramps. At first they told me they were done for the season, but the owner looked and found the last of the lot. I was so excited. I told her how I used the ramps last year. I told her I used them to cook salmon, in cous cous, and just roasting them in the oven. The flavor of the ramps are incredible. I might try to freeze them. I think if I puree them and freeze them they would retain their flavor. I know it is done with basil, garlic and ginger. Ramps as I mentioned last year are seasonal, and they can only be found in the spring. I also want to try and grow them. I know I kill every plant that I have but they are worth it. I also want to add them to the zucchini spaghetti, in a new vegetable dish. I am looking forward to the adventures of the ramps. Stay safe my fans and Bon Appetit.
