Happy Mother’s Day 2014
Happy Mother’s Day to all the moms out there. Last night for dinner I made zucchini squash with ricotta cheese. I boiled the zucchini squash in salted water. I boiled it for about 10 minutes. I drained it. In another bowl, I put 4 ounces of ricotta cheese, a half cup of parmesan cheese and a bout 2 to 3 tsps. of pesto sauce. I mixed it together and added some ground pepper and garlic powder. I then added the zucchini spaghetti and tossed it together. It was really good. It was also very filling. I was so surprised. The best part was the low calorie factor. Another bonus is the clean up. There was no starchy residue. It was so nice not to have to scrub out the starchy residue from the colander or pot. I have left over zucchini squash, ans I want to try it with a tomato based marinara sauce. This spaghetti has awakened my interest to create new recipes. I hope my daughter loves my new recipes as much as I do. Stay safe my fans and Bon Appetit.
