Time Away – I’m Back
Sometimes life just takes over. I have been overwhelmed this winter between my daughter, my dad and Mr. Max.I have also been battling thyroid and have not cooked for some time. The only cooking I did was for Mr. Max. I made liver for the first time. I do not eat liver but I needed to make it for Mr. Max.The only thing that came out of cooking liver was that it made my house smell good. I was making him beef liver everyday. I also made him salmon, but it did not agree with him. He has a very sensitive belly. I have also made him chicken liver. I must tell you that liver splatters. It is however fast cooking. If you over cook the liver it turns to rubber. I learned this from cutting up the liver for Mr. Max. I almost must note that liver (chicken or beef) splatter all over my kitchen. I keep scrubbing my pots and cleaning my mirrors all day long. I have also cooked when my daughter has been in twice. All of my recipes have been posted on my recipe pages. Just scroll down to find my delicious easy creamed spinach, kickin chicken, wacky turkey meatballs, cous cous with fennel and vegetables. Mr. Max has been giving me a run for my money. Passover just passed. I wish i can blog and tell you I made wonderful foods to celebrate the holidays but I can’t. I thank my friend Ruth who had me over for two wonderful seders and I was served delicious Passover foods. Yesterday was Easter so I made matzoh crack. It is carmel and chocolate and I put roasted sliced almonds on top with some sea salt. It came out very good except that I learned when you make it the butter should be at room temperature, if not the carmel gets very dark. Tonight I still have rotissire chicken. I will make it with steamable fingerlake potato.I steamed the potatoes in the microwave as directed on the package. I mashed them with a little milk and pesto. They came out yummy. The recipe can be found on the bonappetitmom recipes page. I hope that the time I was gone that all of my fans had a healthy and happy winter/spring. Stay safe my fans and Bon Appetit.
