A Snowy Weekend

It is Saturday and it is snowing. It is a good day to clean and cook. I am hungry. After the road trip from Delaware, and the junk food, that I ate all day, I need real food.  After the third cup of coffee, my body was calling for real food. I had left over salad toppers from Trader Joe’s, turkey bacon leftover from Thanksgiving, and eggs. I cooked the turkey bacon and veggies in a tsp of evoo. I then beat up 2 eggs and stirred them in the mix. I added salt and pepper. I liked the eggs. I could have skipped the turkey bacon.  If you are going to eat bacon, calorie for calorie go for the gusto. I did not like the turkey bacon. It did not have that crisp, greasy feel and taste of real bacon.  I am thinking of making turkey bolognese tonight. I made turkey something last night. It turned out to be my turkey bolognese with truffle oil. I also oven roasted vegetables with evoo salt and pepper. I was not tin the mood for pasta, so I made cous cous. I made the cous cous with chicken stock, apple cider, white wine, craisins walnuts, onion and garlic.  Now that the weather has changed and the roads are dry, I think I will venture out today.
