Turkey Meatballs with Pesto
It was the first snow storm of the winter. I went out and shoveled, cleaned the house a bit and made turkey meatballs. I was on the phone with Jill today discussing cookie recipes. Most of them were from chefs on Food Network. She needs to make 7 dozen, and she wants me to make a trial batch, and advise her. That was all that I needed to make my day complete was to make 4 dozen cookies that I would not eat. Instead I made turkey meatballs with pesto. I love pesto, but it costs more to make it fresh than to pick it up already made by Fairway. I picked up pesto sauce that was fresh made by Fairway over the weekend. I made my regular turkey meatballs and added two tablespoons of pesto. It gave the meatballs a great flavor. The recipe is posted on bonappetitmom turkey recipes page. It was not my usual turkey chili for the first snow of the season, but it sufficed. Cooking for one is difficult but there is always leftovers. Stay safe my fans and Bon Appetit.
