My house smells so good. I love to cook for Thanksgiving. I made today my grandmother’s stuffing.I made Trisha Yearwood’s no bake chocolate peanut butter pretzels. I made Ina’s cranberry compote. I then made a new version as I tweaked the recipe. I made Paula Deen’s pumpkin bars. I must say I missed Paula Deen on Food Network this year.  I made cream cheese frosting too. I love to cook especially when I have people to taste test on. My daughter actually helped me this year. She gave positive feedback with each dish I presented to her. She even liked the cranberry compote, which surprised even me. I started the day with my grandmother’s stuffing. My daughter peeled the carrots for me. I then chopped the green pepper, onion, celery and mushroom. I sauted them in butter and olive oil until they were fork tender. I then placed them in a large bowl. I added the bread cubes and white bread, fresh sage, rosemary, and thyme. I added poultry seasoning and parsley. I moistened it with College Inn low sodium chicken stock, until it had a good consistency. I used about 2 boxes of stock. I made two pans of stuffing. The large one is for my sister the over, I have for myself. I followed Ina Garten’s recipe for her cranberry fruit Conserve. I then made a batch that I tweaked with apple cider, and brown sugar. I then made Trisha’s no bake pretzel candy. I think I added to much pretzel crumbs. But I am sure it will be delicious. Anything that has pretzels, butter, peanut butter, sugar and peanut butter has to be good. I will see how they taste tomorrow, before attempting it again. Lessons Learned. I then made Paula’s Pumpkin bars and cream cheese icing. I think I was about a 1/2 cup short on sugar, but I think I liked it better that way. It was not so sweet and sugary tasting. For lunch I had brussel sprouts with some blue cheese, apple and walnuts. it was really good. I even made it n the micro wave. I can only imagine how much better it would have been if I roasted it in the oven. I will definitely make that again. I made chicken sausage for dinner, and my daughter is preparing potato latkes for our dinner tonight. What a joyous day of food.
