My Sister’s Eggplant Parmesan
Last night I went to my sister’s home to celebrate my birthday and my nieces. MY sister made eggplant parmesan. My brother-in-law planted eggplants and they came up. She decided to make eggplant parmesan. It was delicious. I asked her for the recipe. The first thing she did was slice the eggplant. She cut them in vertical slices. She then put them in a colander and soaked them with kosher salt for 10 minutes. She then rinsed the eggplant well with cold water. This is done to take away the bitterness of the eggplant. This is something that really works and makes a difference. She then set up a frying station. It is a 3 part operation. Flour, eggs and breadcrumbs. She then fried them in oil, and placed them on paper towels, to remove the excess grease. She then took the eggplant and layered them in a baking dish along with my brother-in-law homemade sauce. She topped the dish with fresh mozzarella cheese. She baked it for about an hour. I must say it was delicious. It’s quality was that of a top Italian restaurant. It was that good. The only thing that she thought to change was the use of fresh mozzarella cheese on top. She said that the package mozzarella cheese would have melted better. I agreed with her. To get that gooey and sting effect of the mozzarella cheese, the store-bought one is a better choice for melting on the top of the eggplant. My sister also made meatballs, sausage and pork which was also delicious. With the pasta and my brother-in-law sauce it truly was one of the best home cooked dinners, I had in quite sometime.
