Sometimes you really don’t need the Booze
Last night I decided to clean out my vegetable bin and I made sauteed vegetables. I chopped onion, zucchini, pepper, and garlic. I sauteed them in olive oil salt and pepper. That was all I added. As I cooked them down the sweetness of the vegetables became present. I added no sugar or any other seasoning. I tasted them and they were delicious. I was tempted to add a bit of wine. To tell the truth, it did not need any alcohol at all. I felt adding any alcohol would have taken the wonderful natural flavor from the vegetables away and compromise the natural sweetness of the vegetables on their own. I know that I have written that booze makes food taste goods, but in this case the alcohol would have taken away from the natural flavor of the vegetables. I made some pasta and I served the veggies over the pasta. To tell the truth I should have added a little chicken stock to make a sauce. But I must say the veggies were delicious if I had served them on their own.I also made Rao’s lemon chicken. I followed the recipe for the sauce and instead of using a regular chicken, I made boneless, skinless chicken thighs. The sauce was really yummy. It reminded me of a lemon chicken that my sisters old boyfriend used to prepare for my family. It was that good. If I were to change the recipe it would be to maybe add the zest of a lemon or two. To tell you the truth maybe not. There are some recipes that are so delicious on their own they do not need fixing. I would try it once just to see, but I am not sure how it will taste.
