Breakfast for Dinner

I love breakfast foods. I just do not love eating breakfast.  I love breakfast foods at a diner late at night. It is a lot of work to make so early in the day, but I love breakfast food. I always told my daughter that I will make breakfast for dinner one night. I have been saying that for years. Last night I finally made breakfast for dinner. I made scrambled eggs, bacon and pancakes with blueberries and strawberries. The scrambled eggs were made plain. If it was just me eating them, I would have added goat  cheese. That would have not been pleasing to  my daughters palate. Normally I make blueberry pancakes. I purchased strawberries from Shoprite that smelled incredible and I added them onto the pancakes as they cooked on the griddle.  They added a sweetness that made the pancakes feel as they were a crepe or a cake. They truly were delicious. I cheated and used microwavable bacon. I have to admit that I did not enjoy the bacon.  My daughter loved it all. It was a fun and healthy meal. I realized the reason that I will probably not do it again as the cleanup was overwhelming. I had bowls and pots to wash. I also had a nice mess on my counter and stove. Since my daughter is unable to help me clean up the mess, this treat might not happen for a while. For dessert, I made berries with balsamic vinegar. I have seen strawberries with balsamic, but never blueberries. I must tell you they were very good. I sliced up the strawberries, added the blueberries, a little sugar, a pinch of salt and a tablespoon of balsamic vinegar. I let it sit for awhile. I then served them. When my daughter first tasted it she asked if I was poisoning her. I laughed and asked her why she would say that. She said it tasted sour. I told her I added her favorite balsamic vinegar, and as she continued to  eat it (now that she knew it was not poisoned) she began to enjoy it.
