I cooked Ramps!

I made a delicious dinner last night. I made cod, sweet potato, purple kale and ramps.Ramps are a cross between a scallion, wild garlic and a leek. They look like a leaf. They have a smell of onion, garlic and lemon rolled into one. They are available only in the spring.I purchased the ramps on Saturday when I went to New Paltz, and I found them in a chocolate shop.  I used the ramps in two different ways. The first way was oven roasted.I chopped up the ramps in the same fashion that I chopped the purple kale. I put it on a sheet pan and tossed it with evoo, salt and pepper. I put it in a 400° F degree oven for 25 minutes. It tasted really good. The second way was used on the fish. I rubbed the cod with evoo, salt and pepper. I  made a panko crusted topping for the cod. I pressed it on the fish. I took pieces of ramps and I placed them on top of the fish. I also baked the fish in the same oven as the purple kale for 25 minutes. My daughter mentioned that the fish tasted differently than usual. She told me it tasted spicier, and definitely not bland. I also thought that the ramps added an additional flavor. I really enjoyed the spicy flavor of the ramps. I also loved the flavor of the ramps when I oven roasted them with the kale.
