A Traveling Side for The Premire of One Life to Live and All My Children
Last night I was invited to my friend for dinner. The occasion was to watch the premiere of One Life To Live and All My Children on The Online Network. Our beloved soaps are back and they have a new home online. My friend made BBQ chicken and salad. I offered to make a side dish. I offered cous cous and my friend told me that she loves it. I toasted some almonds and I put them aside. I then sauteed onions, peppers and zucchini. When I went to add the chicken stock, I realized that I did not have any. I know I could have just added water, but to me the flavor level would have gone down dramatically. I opened a can of San Marzano tomatoes. I added the tomatoes and chopped them up. I then added some wine and in 15 minutes I had a nutritious and delicious side. This is why I love to cook. You can improvise when you cook. I found that last night not only did I change a recipe but I learned to improve on a recipe that I already had. The tomatoes are sweet on their own, and by adding a little sweet wine, there was no need for sugar. I did use to add a little water to loosen the cous cous and allow it to cook properly. I also liked the tomato flavor of the cous cous. The cous cous really looked very appealing. It had a bright red overtone from the tomato and vivid colors from the vegetables. We all enjoyed the healthy, and yummy cous cous. My cous cous was a compliment to my friends delicious BBQ chicken and salad. My friend made a balsamic vinagerette with evoo, dijon mustard and a small hit of sugar. The dressing was very good. The sugar cut the acidity of the vinegar.
