Steak and Sides
Yesterday turned out to be a nice day. My daughter and I spent the day in the garage cleaning out more stuff. I took out the steaks that I bought from Fairway, and decided to make a BBQ. As dinner time approached so did the clouds and the wind. I decided to make the steaks restaurant style. I heated an oven proof skillet till it was screaming hot. I had prepared my steak by coating it with evoo, salt and pepper. I seared the steaks for two minutes on each side. I then transferred it t a 400° F oven for 7 minutes. I also made roasted tomatoes. I sliced them vertically, and removed the pulp and seeds. I drizzled them with evoo, salt, pepper and a little sugar. I roasted the tomatoes for 25 minutes. I then took them out and put a little Parmesan cheese on them and put them back into the oven. The recipe for the Roasted Roma Tomatoes is on the website on the bonappetitmomrecipes page. I liked them, my daughter not so much. I also made sweet potato. I portioned my dinner and shared it with Mr. Max. He enjoyed every bite. Tonight’s menu plan is grilled chicken cutlets. Depending on the weather they will be broiled or I will put them on the BBQ. I think I am going to do a balsamic vinegar and evoo marinade on the chicken cutlets. My goal is to get back into my jeans again. With the weather getting warmer and my daughter able to get out I think that will help get off some of my additional weight. I have been trying hard to get back. I need to follow what I have been preaching and be proactive. We are going up to New Paltz this weekend. I think the trip will do us both some good. I think the trip up will be a great motivation for her to heal. Back to today’s menu. I will probably make sweet potato. They are less starchy than white or russet potatoes. Now for the vegetables. I will go through my fridge and see what I have left from this weeks food shopping. I will post the outcome tomorrow. Stay safe my fans and Bon Appetit.
