Eggs for Lunch
I very rarely make eggs for lunch. When my daughter and I returned from our latest trip to the doctor yesterday, I was hungry. I was not sure of what I wanted for lunch. I wanted something warm. Normally I would make my usual go to oatmeal, but I was not feeling it. I looked in the fridge and I saw that I had herb goat cheese and scallions. I also had eggs. I immediately thought that is what I am going to make for lunch. I took out a non stick skillet. I made scrambled eggs with herb goat cheese and scallions. I beat the eggs and added a tablespoon of water. I then added the sliced scallions. Instead of butter I used a small amount of evoo. As the eggs cooked I crumbled the herb goat cheese into the eggs. When the eggs were finished I took a piece of bread and toasted it in the hot empty pan. I must say the eggs were yummy. The lunch filled me up. It was really satisfying. I really had a very healthy meal. It was so simple to make. I had everything in my house. It was wonderful not to have to pay $10.00 for something so easy to make at home. Not only was it simple to make but it was really good. Cleanup was a breeze since I used a non stick pan. For dinner last night I ordered pizza from Mario’s. My daughter was tired and so was I. I took Mr. Max to get his nails cut which is always an exhausting proposition. I ordered pizza and a tossed salad. Since I ordered pizza and salad with my coupon, I was entitled to get a free baked ziti. Once I brought the food home I was not in the mood for the pizza anymore so I had salad and some baked ziti. For the first time in awhile I did not have 2 slices of pizza and salad and baked ziti. I ate until I was full. I might just be back on the right track again. I had a small amount of salad and ziti. Like I always say portion control is the key to losing weight. I really believe that. I believe that I can eat what I enjoy, but you must watch your portions. Besides the health aspect of dieting, I have no money to buy new clothes. I took lamb chops out of the freezer for tonight’s dinner. My daughter absolutely loves them and so do I.
