Yesterday was another busy day. I actually got a decent night sleep for a change. I even slept past 5am.  My daughter started PT (physical therapy) outside the house. It is in Woodbury. Parking is great and the therapist was good. After therapy we went to West Hills and picked up meds for Mr. Max. By the time we arrived home it was after 4pm. I took pork chops out to make for dinner. Normally my daughter does not love them. She will eat them, but she will growl as she does. As I said I am all about simple foods these days. I chopped up onion and celery with the tops on. I seared the pork chop and then I added the vegetables. When I got good color on the pork and translucent vegetables, I poured about 2 tablespoons of Calvados into the pan. Calvados is apple flavored liquor. Pork Chops and apples are a famous pairing. I prepared roasted spinach and sweet potato to serve along with the pork chop. I also served applesauce along side the pork chop. Awaiting the brutal critique from my daughter, I was pleasantly surprised when she told me that my dinner was very good. Hearing a good review from my daughter made my cleanup of the kitchen bearable. Tonight is going to be rainy and chilly, I think  I will make a pot of chili for dinner. I have not made chili for a long time and since the weather is due to be on the coldish side, I think the chili is a good idea. I will also make cous cous on the side prepared with roasted vegetables. Believe it or not my freezer is almost empty. I still have a turkey down in my basement freezer which I eventually need to cook. Maybe I will make it this weekend. Turkey is really quite simple to prepare. You basically set it and forget it. Since today involves another trip to the doctor, I will see how adventurous I will be with my cooking. For some reason doctor visits and my energy level do not mix well. I will keep you posted.
