Yesterday was a cold, rainy and a just plain raw day in NY. It was a good day to cook and even clean. My niece came over and she had a craving for tahini. She made a salad with mescilin lettuce, goat cheese and peppers. She made a dressing of tahini and evoo. I made her  roasted red pepper humus. The recipe is posted on the website on the bonappetitmomrecipes page. The humus had to much garlic. It was overwhelming. I cut the amount of garlic to four cloves from the six that I put in. The roasted pepper gave the humus a very nice flavor. I like mixing the humus from straight chick peas. I find that using a mix of the chick peas and the white beans gives it a nice creamy texture. I find that the chick peas alone is to dry and chunky. I served it with Trader Joes sweet potato chips. They are my favorite chip. They are not overly salted as other commercial chips are. They also hold up well to all dips. For dinner my friend came over. I made fillet of beef, roasted vegetables, tomato salad and sweet potato. I made the beef exactly like Ina Garten instructed, and she was point on.  I covered the beef in butter, salt and pepper. I put it in a preheated 500°F oven and cooked it for exactly 25 minutes. It came out exactly as she said it would. It was perfectly rare in the middle all the way through, which is  exactly the way my friend likes to eat her meat. The meal was good.  I bought a prime fillet of beef  from Fairway. Fairway really does have the best beef in town. Looking back now I should have made a sauce to serve with the meat. I had the ingredients, I just forgot. I think my lack of sleep is impending on my cooking instincts. Mr. Max is not eating his peanut butter sammies with his meds. Maybe he is bored, so now I must be inventive. Today I took the roast beef from Fairway, wrapped his pills in it and put in his white bread from Shoprite. He ate it. No surprise there. My daughter tells me he is spoiled. I say he is just finicky. He is getting old and I want him to be happy and healthy. I am not sure what is on today’s menu. I have leftover lemon chicken in the fridge, along with my halibut salad. That takes care of lunch. I am not sure what will be for dinner yet. I have all day today to think about it.
