Grilled before the Thunder
Yesterday was a really nice day. The weather was warm and sunny. With the prediction of rain and thunder in the forecast, I decided to take advantage of the nice weather and grill my dinner early. I marinated the chicken breasts when I bought them thinking I was going to prepare it that night. I made fish instead. I wound up marinating the lemon chicken breasts for two days. I smelled the chicken to make sure it was still good and it was. I fired up the grill and I prepared the chicken. I got a nice sear on each side. I turned the chicken twice and got some nice cross marks on the chicken breasts. It took about 10 to 15 minutes to prepare it. The chicken came out juicy and with great lemon flavor. My daughter loved it. I must say my grilled lemon chicken gave the lemon chicken that I purchased from Fairway a run for its money. The recipe for Grilled Lemon Chicken has been posted on the website on the bonappetitmomrecipe page. Since I have an abundance of sweet potato in the house I prepared that as well. I served the lemon chicken breast with sweet potato and cherry tomatoes. It was such a simple supper but it was truly delicious. My niece came over yesterday and blind tested my halibut salad versus the halibut salad I purchased from Shoprite. She liked mine better. That made me feel good. She said the Shoprite halibut salad was fishy. The halibut salad from Shoprite was delicious but it had a fishy odor. The fish was not bad, it just smelled like it came from a fish store. The weather in NY is predicted to be rainy for the next few days. I am back to cooking inside. At least the temperature will be cooler. I was thinking of making roast beef for dinner tonight, but I forgot to take it out of the freezer last night and the meat is frozen solid. I will make it tomorrow night.
