My freezer works great, the fish was still frozen

Yesterday afternoon, I went to take the fish out of the refidgerator to prepare for dinner and it was still frozen. My freezer and fridge must be in great shape, because my fish was still frozen. I really thought that since I took the fish out of the freezer on Sunday that Monday it would have been thawed. But since it wasn’t  andI had to get something to make for dinner.  I went to Shoprite. I purchased halibut salad and cod from the fish department. I must say that of all the supermarkets in the area, I prefer buying my fish at Shoprite.  When I buy fillets on sale there are never any bones. Unlike other stores in which I always find bones in the fillets every time I buy them. The fish is always fresh and the man in the fish department is very knowledgeable about the products that they sell. I asked him about the preparation of the halibut salad and he told me. I  plan on making that today. I love halibut salad, so I purchased it from Shoprite hoping to recreate the recipe. I also purchased chicken cutlets to make on the grill for lunches for the week. Dinner last night received an excellent rating from my daughter. I made cod oreganata. I took panko and Italian bread crumbs and put them in a bowl with some minced garlic, olive oil, salt and pepper. I mixed it until it became a crumb. I rubbed the fish with a little olive oil and I smeared the bread crumb mixture over the fish patting it down. I put it in a 400° F for 20 minutes. I also made zucchini with cous cous. I sauteed the zucchini with an onion in evoo. Once they were soft, I added chicken stock, Marsala wine,  craisins, salt and pepper.  I brought the mixture to a boil and added the cous cous. My daughter said it was good. She never eats my cous cous. I think it was the Marsala wine. Booze makes food taste cook. Like butter and brown sugar, alcohol is up there in the” what do I add to make this dish taste good”  category.  She also enjoyed the fish, which really came out delicious. It was moist and packed with flavor. Tonight is lemon chicken with roasted veggies. I do wish my daughter liked cauliflower. I adore it, she does not. What I do is take a sheet pan and I make broccoli on one side and cauliflower on the other. Since I treat the vegetables in the same fashion I use just one sheet pan. I will also prepare sweet potato. I buy them when Shoprite has them on sale. Shoprite has the best price in town when they have sweet potatoes on sale. I buy at least two boxes. They last a long time and everybody loves them. I must say that living in a community with so many great supermarkets, I must say that for years I have scoped them out and I know the best that each store has to offer. As for fish and sweet potatoes, I must say that Shoprite takes the edge over the other supermarkets in town. Time to start learning how to poach fish for my halibut salad.
