I got my lemon chicken after all
I went out and made a shiva call yesterday. My friend and I decided to stop by Fairway to pick up a few things. In the produce aisle, I noticed purple kale. I never knew that kale was purple. It looked like the green kale. I grabbed a bunch because my daughter loves it and I decided to make that for dinner. I also bought Fairway’s lemon chicken for today’s lunch. My friend and I also exchanged food. We traded a salami for halibut. I had an extra salami and she had extra fish. I decided that I am going to make halibut salad . I think it is probably my favorite of the seafood salads. I love poached whitefish and baked salmon salad too. I find that halibut salad has a very mild flavor and is just light and delightful. I hope I can recreate the salad as I have never made it before. I always buy it in the seafood department at Shoprite. I just need a few ingredients from the store. I need celery. It is funny whenever I buy celery, I always feel the need to cook something that needs a mirepoix. I always have onions and carrots on hand but I never have celery on hand. I should really buy it more often. It is such an under utilized vegetable. It makes a great salad ingredient and a low calorie healthy snack to munch on. When I began to prepare dinner last night, I had a small problem. The fish I took out was still frozen. The lemon chicken was now routed to dinner. I made the sweet potato as I normally do and I made the purple kale. I washed it, chopped it up and put it on a sheet pan. I put olive oil, salt and pepper on the purple kale. I put it in a 400° F oven for 20 to 25 minutes. It came out great. I think it tasted just the same as the green kale. My daughter and I both enjoyed it immensely. It wound up to be a wonderful dinner. Fish is definitely on the menu for tonight. I have never made cod oreganata. I bought Fairway’s own evoo (extra virgin olive oil). It was on sale. I think it is supposed to have a fruitier flavor. I will try it on the fish tonight. I also picked up zucchini. I think I will make that with cous cous as a side dish. I hope it comes out yummy. I will post my recipes tomorrow if they come out delicious. Stay safe my fans and Bon Appetit.
