Not Grilling Fish Tonight
Unless the temperature outside goes up, I will be preparing my fish in the oven. It is still a little to cold outside to grill. Tonight I will be making broiled cod oreganata with sweet potato and roasted vegetables. I am not sure how I will prepare the fish but I am sure garlic will be involved. I love a plain baked sweet potato. I know that there are so many ways to prepare a sweet potato, but I really prefer just baking it. I could make baked sweet potato fries, or mashed sweet potato, but I am trying to keep my calorie intake down. I really need to get back on track. I did not bake with the blueberries yesterday. I know it was cool enough yesterday to turn the oven on and bake, but the scale was yelling at and it was saying fresh fruit, fresh fruit. Instead I served the blueberries with a dollop whipped topping and called it a day. I needed a butter and brown sugar break. I find that I do like desert after dinner. I just need to start making healthier choices again. I am getting a craving for grilled chicken cutlets with lemon. I think I will prepare that for dinner tomorrow night. It is light and refreshing. It is also calorie friendly. I am not sure if it will be grilled or oven broiled. By now you know the temperature outside is the new variable. It is the beginning of the week and I really need to plan my menus for lunch and dinner. I will do my food shopping tomorrow. Tonight I will discuss with my daughter her wishes for the menu of the week. She is pretty good about eating healthier these days. Since I am the main cook and bottle washer it is up to me to give her healthy food for our meals. Stay safe my fans and Bon Appetit.
