I think I am part Irish…I love St.Patrick’s Day
I love St. Patrick’s Day. I always have. It is such a happy holiday. I love the food of the Irish. I love corned beef and cabbage. I love to cook on the stove top or in my slow cooker. My daughter’s favorite way of corned beef cooking is when I add beer to the corned beef. The flavor s just outstanding. I can never make enough. Although she is not a big fan of cabbage, she is a big fan of my potatoes. I cook the cabbage and potatoes in the same cooking liquid. I like the Yukon gold potato when I make corned beef and cabbage. I find that they are not as starchy as the Idaho potatoes. I also add the same spices that I use in my corned beef. It is so nice to cook when it is appreciated. I also love making beer bread or Irish soda bread. The house smells fabulous from fresh bread baking in the oven. I love to cook on this holiday. Even my daughter loves this holiday. I love the luck of the Irish.
