A Welcome Home Dinner for Dad

My dad arrived from Florida to help with my daughter yesterday. Since I wasn’t sure who would be arriving for dinner, I made a feast. I made chicken sausage and pasta.I sliced the chicken sausage and seared it in a pan with a drizzle of olive oil. I sauteed a lot of onion and garlic.I then added back the chicken sausage back to the pan and added chicken stock and sherry wine. It makes a great sauce for the pasta as well. I roasted cauliflower and broccoli in a hot oven and served it with the sausage and pasta. I have made this before and what is great about this meal it is quick, filling and nutritious. Another perk is only two pots to clean. The wine and the chicken stock deglazed the sausage and onion bits that are on the bottom of the pan. For dessert we had the blueberry cake I made yesterday. My sister and niece really liked it. At least that is what they said. My dad is making meatloaf tonight for dinner. I will share the recipe tomorrow and add it to the bonappetitmom recipe repertoire.  I’m sure it will be very good. I will keep you posted. Stay safe my fans and Bon Appetit.
