Since the weather outside is frightful, I have a lot of time to play with food. I love pork chops. I have center cut lean 1″ thick beautiful chops. I love to eat thick chops, they are really good. Now that I am still watching my weight, I am going to try to be good and  not eat both of them. Normally I just salt and pepper them. Tonight I sauted  an apple, orange pepper and onion. I then seared the pork chop.  I added about 1/4 cup of madeira wine and I worked the bottom of the pan to pick up all then brown bits. I then took the pan off the stove and put it in a 375°F oven for 25 minutes.  I think I’m going to try something a little bit different with ingredients in my pantry. I bought white truffle oil a few months ago. I have heard many chefs use it on various items.  I had french fries at a local pub with the truffle oil and some Parmesan cheese and they were to die for. I am going to try it tonight over a little pasta to serve with the pork chop. I am also roasting frozen spinach. I know I have never heard of anyone who does that but I want to experiment tonight and see how it comes out. I must say that dinner was superb. I would even pay for this meal. It was really good. The spinach came out delicious. I should have let it cook longer.  I think it will crisp up. The pork chop was divine. Between the wine and the vegetables it was great.  The chop was juicy and tender. The pasta was good.  I probably should have added a bit more truffle oil, but I was afraid it might have been overpowering. But none the less it had great flavor. Now that dinner is over and I full, and so is Mr. Max.  He loved the pork chop too. Now comes the clean up of the kitchen. I’m just going to do it.  Stay safe my fans and Bon Appetit.
