On the 2nd Day of the New Year……..
I made turkey chili. It was really good. I chopped up onions, carrots and orange peppers. I sauteed them in olive oil and added the ground turkey. I added black beans, white beans and corn. I used San Marzano tomatoes. They are actually as good as I heard them to be. They were sweeter than using my regular chopped tomatoes from the can. I added red wine. I used a special blend of spices. I create it as I go. It came out really good. I didn’t add water or stock. There was no need to. Tomorrow if it is thick I might need to add stock. I also made biscuits, they were packaged and had way to many calories. I had one and it really was good. I had to resist the temptation of eating more. For desert I had fresh fruit. It really was a great dinner. What a joy it was to cook for my family. We ate as we watched a dvd of the BBC series Sherlock Holmes. It was not Les Mis, but it was much better than the popcorn dinner. Since I am going for blood work next week, I want to eat healthy, so that my blood levels are good.
