I made split pea soup on a cold winter day.
It was raining and cold out today. A real raw day. So today as I came home and blogged, I decided to make pea soup. I cut up onion, carrot, and an orange pepper. I sautéed them in olive oil. I then added the leftover ham, bone and all. I trimmed all the fat off the ham so the soup would not be fatty. Instead of water I used low sodium chicken stock, bought it to a rapid boil. I then added the peas and let it cook for an hour. It cam out thick, hearty and delicious. I felt really good that I am using all of my foods to their capacity. It was also nice to spend a day on bonappetitmom.com. I loved writing about diet counseling. It was nice to go down memory lane and see where I wound up. At least about my weight.
