Stranded in the burb
I am now car-less for over a day. I could have eaten my way through this, but I decided to challenge myself and make some healthy food from what I have in my kitchen. After Hurricane “MOM”, I have not done a big shopping. I only shopped for the essentials. I decided to buy on an as need basis at least until college winter break. I opened my fridge and I found salad ingredients, lettuce, tomatoes, olives, onions and goat cheese with chives. It was really nice that I made an old favorite vinaigrette for my salad. I used 1/2 cup of olive oil, 1/4 cup of red wine vinegar, 1/2 tsp salt, 1/4 tsp pepper , 1/4 tsp of mustard. I whisked them all together and it made a refreshing salad dressing. It made a very good lunch. In my pantry I found a can of healthy vegetable soup. It was low fat and low sodium. It wasn’t bad, not great. I now really am in the mood for my own chicken noodle soup. For dinner I found eggs and I used the rest of the goat cheese and I made a delicious omelet. For a snack I found flat bread crackers and fig jam. I will enjoy that with hot cocoa later. What was really nice was that it cost me no out of pocket money on Chinese delivery. I also had a loaf of bread in the freezer to give MrMax his daily meds. I know you are saying yuk, but I’m glad to keep it for an emergency.
Tomorrow when I get my wheels back I cannot wait to hit the supermarket to restock on my staples. I will definitely buy salad fixings, eggs and different cheese to try new recipes.
