I think, no I am sure that I have PTSD -Post Traumatic Storm Disorder, yes you heard it (saw it) here first. It is almost a month since the storm but the affects are still with me.  I miss my tree and my backyard.  I miss my sister’s house. Now I am just missing my child.

OK, now let’s do food. Thanksgiving came way to soon after Hurricane Sandy aka “mom”.  Oh well, next year.  Now we are in the holiday mode.

Hanukkah is the first holiday to cook for. I will make my usual brisket or turkey. I also make potato pancakes (latkes) with homemade applesauce.  I do not fry my latkes. It is fattening and very messy. I actually prefer the frozen ones. I attempted to make them in the past but to be quite honest, they never came out right.  However I love my applesauce.  I love the way it comes out so ruby red.  I like it a little sweet but still tart from the granny smith apples.  I take about 8 apples of all different varieties. I peel them, core them and dice them.I put them in my dutch oven with some water, orange zest,orange juice, cinnamon, nutmeg and ground cloves. I put the red peels on top and bake it in a 350 degree oven for an hour.  For added sweetness you could top it with brown sugar. Remember you must zest fruit first then juice it.

I missed my pumpkin bars during Thanksgiving. I truly forgot to make them. It must have been PTSD.  I think I will make them for Christmas.
