Risa's Cauliflower Crack

Ingredients

  • 1 head cauliflower
  • 1 cup All purpose flour
  • 3 cups panko bread crumbs
  • 3 x-tra large eggs
  • 1/4 tsp. kosher salt
  • 1/4 tsp. pepper
  • 1 cup BBQ sauce I used Townline BBQ sauce
  • 1/2 cup dark brown sugar
  • 1/4 cup lemon juice lime juice will work too
  • 1 tsp garlic powder

Instructions

  • Preheat oven to 375° F. In a large bowl combine flour and cut up cauliflower florets until completely covered. Set up a dredging station. In one bowl the beaten eggs and another for the panko bread crumbs. Dip the cauliflower in the egg, then panko. Then dip it again in the egg and the panko. Transfer to a sheet pan lined with tin foil and sprayed with cooking spray. Season with salt and pepper. Bake until crisp and golden 20 - 25 minutes. Meanwhile, in a small saucepan over low heat, warm the Townline BBQ sauce, brown sugar, lemon juice and garlic powder. Coat baked cauliflower in sauce and serve as a side dish to roasted chicken or as an appetizer with a glass of wine. Bon Appetit
