Harvest Hummus

Ingredients

  • 1 cup roasted carrots
  • 1 cup roasted butternutsquash
  • 1 cup pumpkin puree
  • 2 cloves garlic
  • 1 1/2 tsp. kosher salt
  • 1 tsp. pepper
  • 2 tbsp. olive oil
  • 1/2 cup tahini
  • 1 lemon zested
  • 1/2 lemon juiced
  • 1/2 cup water

Instructions

  • In a 400°F oven roast your butternut squash and carrots. Season with a little olive oil, salt and pepper. Set aside to cool. In a food processor, place all the ingredients except olive oil and water. While pulsing the ingredients, stream in the olive oil and water until you get to the consistency you like. Make this into the most fabulous nachos for Thanksgiving. Bon Appetit.
