Easy Sausage and Peppers

Ingredients

  • 6 links sausage hot or sweet
  • 2 onions sliced in half moons
  • 2 orange pepper sliced in strips
  • 1 yellow pepper sliced in strips
  • 3 cloves garlic minced
  • olive oil
  • 2-3 tbsp. tomato paste
  • 1/4 cup white wine
  • kosher salt
  • pepper
  • 1-2 tsp. dried oregano

Instructions

  • Pre heat oven to 400°F. Rub the sausage links in a little olive oil. Cook for 20 minutes. Set aside to cool. Meanwhile in a pot, sauce the onions and peppers in a little oil. Saute for about 5 minutes. Add the garlic and cook for a few more minutes. Add the tomato paste and cook for another 2 minutes. Add the wine and cook for a few minutes more. Add the oregano. When the sausages are cooled slice and add them and the oil from the pan to the onions and peppers. Cook until everything is combined. Check for seasoning. Serve over a short pasta. Bon Appetit.
