Easy Frittata

Ingredients

  • 8 eggs jumbo
  • 1/4 cup onion minced
  • 1/4 cup red pepper minced
  • 1/4 cup orange pepper minced
  • 1/4 cup yellow pepper minced
  • 3 cloves garlic minced
  • 2-3 tbsp. olive oil
  • 2 tbsp. fresh rosemary minced
  • 2 tbsp. parsley minced
  • splash milk
  • 1-2 tbsp. kosher salt pinch as you go
  • 1-2 tbsp. black pepper pinch as you go
  • 4-5 grape or cherry tomatoes
  • 1/4 cup shredded cheese

Instructions

  • Prepare your veggies into a small dice. Saute in a oven prove frying pan till soft. Whisk together eggs and milk. Add chopped parsley and rosemary. Pour the egg mixture over veggies. Mix together. Place in a preheated 350°F oven for 10 minutes. Place the shredded cheese and return for another 10 minutes. Serve with fresh fruit. Bon Appetit
