In a non stick skillet saute the onion, carrot, celery, pepper, and chicken sausage. Set aside and let cool. In a measuring cup add the eggs, half and half, salt, pepper and the cheese. Add the cooked mixture to the egg mixture and pour into muffin tins. Bake for 30 minutes in a pre heated 350° F oven. Enjoy with a tossed salad or zoodles and pasta. Bon Appetit.
