On a sheet pan sprayed with cooking spray, lay the two cod filets. Sprinkle the salt, pepper, garlic powder, onion powder. Spread the mayonnaise on the cod. Then sprinkle the Italian flavored bread crumbs, and then the panko bread crumbs. Drizzle with olive oil. Lay your thyme sprigs on the cod filets. Bake in a preheated 375°F oven for 20 minutes.
