Rack of Lamb

Ingredients

  • 1 rack lamb frenched
  • olive oil
  • 1-2 tbsp. dijon mustard Grey Poupon
  • 1- tbsp. deli mustard Carnegie Deli
  • 1/4 cup parsley
  • 1/4 cup mint
  • 1/4 cup chives
  • 3 cloves garlic
  • 2 tbsp. rosemary
  • 1 lemon zest and juice
  • 1 tbsp. kosher salt
  • 1 tbsp pepper

Instructions

  • In a small bowl mix the mustards. In the food processor put all of your fresh herbs,garlic, lemon zest and juice. Pulse. Stream in a little olive oil until moist. Preheat oven to 450°F. Cover the lamb bones with tin foil. Sprinkle the lamb with salt and pepper. Place a layer of the mustard on both sides of the lamb. Coat both sides with the herb mixture. Roast for 22 minutes. Serve with matzoh zucchini lasgnna. Bon Appetit.
