Cheddar Cheese Frittata

Ingredients

  • 1 tbsp. EVOO
  • 1 tbsp butter
  • 1/4 cup onion minced
  • 1/4 cup celery minced
  • 1/4 cup carrot minced
  • 1/2 orange pepper diced small
  • 2 cloves garlic minced small
  • 10 x-tra large eggs beaten
  • 11/2 cups cheddar cheese grated or shreeded
  • 1/2 cup Parmesan cheese grated
  • kosher salt as needed
  • pepper as needed
  • 1/4 cup fresh basil
  • 2 tbsp. minced dill
  • 2 tbsp. minced rosemary
  • 2 tbsp. minced thyme

Instructions

  • In a heat proof skillet on the stove top, saute the onion, celery,garlic, carrot and pepper in the evoo and butter. Pinch a little salt and pepper. In a separate bowl mix the eggs, and cheeses. Pour over veggie mixture. Cook for a minute on the stove top and then transfer to a preheated 375° F oven for 25 minutes and then under the broiler for 3 minutes.Sprinkle some extra herbs. Enjoy with toast and a cup of coffee. Bon Appetit.
