In a heat proof skillet on the stove top, saute the onion, celery,garlic, carrot and pepper in the evoo and butter. Pinch a little salt and pepper. In a separate bowl mix the eggs, and cheeses. Pour over veggie mixture. Cook for a minute on the stove top and then transfer to a preheated 375° F oven for 25 minutes and then under the broiler for 3 minutes.Sprinkle some extra herbs.
