Sausage, Peppers, Onion in Pesto

Ingredients

  • 5 links Italian Sausage
  • 1/2 green pepper sliced thin
  • 1/2 yellow pepper sliced thin
  • 1/2 orange pepper sliced thin
  • 1/2 red pepper sliced thin
  • 1/2 red onion sliced thin
  • 1/2 cup white wine
  • 1/2 cup chicken stock
  • 2 cups homemade pesto
  • 2-4 tbsp. olive oil
  • 1/2 tsp kosher salt
  • 4 cloves garlic minced

Arugala Pesto

  • 1 pkg Arugala
  • 4 cloves garlic
  • 1/2 cup Parmesan cheese
  • 1/2 cup pecans
  • 1/2 cup olive oil
  • 1 cup fresh basil

Instructions

  • In a 350° F oven bake the sausages for 30 minutes. Remove and put aside. In a pot saute the sliced onions and peppers for a few minutes add the salt. Add the garlic and cook for another minute. Add the wine and chicken stock. Stir till combined. Once cooled slice the sausages and add to the peppers and onions. Add the pesto and serve over pasta. Serve with a chunk of crusty bread.   • In a food processor with the metal blade attached, add all of the ingredients except the olive oil. Process the ingredients and stream in the olive oil, while the machine is on. If the consistency is to thick add more olive oil until you get to the consistency you want. Serve over sausage and peppers. Bon Appetit.
