Zucchini with Zoodles and Pasta

Ingredients

  • 2-3 tbsp. olive oil
  • 4-5 zucchini grated
  • 4 cloves garlic minced
  • 1 shallot minced
  • 1/4 cup white wine
  • 1-2 tsp. kosher salt
  • 1-2 tsp. pepper
  • 1 lemon zested and juiced

Instructions

  • In a medium size pot saute the shallot for a few minutes. Add the garlic. Add the zucchini and stir. Add the white wine. Add salt and pepper to taste. Add the lemon zest and the juice. Stir until softened. Serve over zoodles and pasta. Bon appetit.
