Pot Roast

Ingredients

  • 1 cup mierpoix
  • 2 onions chopped
  • 7 baby carrot
  • 6 small pottatoes halfed
  • 1 lb cremini mushrooms sliced
  • 1 can stewed tomatoes
  • 1 cup red wine
  • 1 2 lb chuck roast
  • kosher salt to taste
  • pepper to taste
  • olive oil
  • 3-5 cloves garlic
  • 2 tsps. thyme
  • 2 tbsp. chopped rosemary

Instructions

  • In a dutch oven, sear the beef in a little olive oil on all sides. Remove from pot and set aside. In the dutch oven saute the mierpoix. Add the other vegetables and cook for a few minutes. Add the wine and spices. Cook for a few more minutes. Place the meat back in the pot and nestle until almost covered. Place in a pre heated 350° F oven for 3 hours. Enjoy with potato pancakes and a glass of wine. Bon appetit.
