In a dutch oven, sear the beef in a little olive oil on all sides. Remove from pot and set aside. In the dutch oven saute the mierpoix. Add the other vegetables and cook for a few minutes. Add the wine and spices. Cook for a few more minutes. Place the meat back in the pot and nestle until almost covered. Place in a pre heated 350° F oven for 3 hours.
