Zoodles and Vodka Sauce

Ingredients

  • 1 pkg zoodles
  • 1 lb. linguine
  • 4 ozs. mascarpone
  • 4 ozs. shredded mozzarela cheese
  • 1 jar vodka sauce
  • 4 ozs. Parmesan cheese
  • 1/2-1 tsp. kosher salt
  • sage leaves

Instructions

  • In a large pot add kosher salt and bring to a boil. Cook pasta according to directions. Add zoodles to water about 2-3 minutes before pasta becomes al dente. Strain both and place in a big bowl. Stir in the cheeses immediately. Add the vodka sauce till you get to the consistency you desire. Add sage leaves minced and then use as a garnish on top. Enjoy with a glass of wine. Bon Appetit.
