Preheat your oven to 500°F. On a sheet pan lined with foil, place the roast beef. Salt the roast beef and then slather it with olive oil or butter. Mix the mustard, balsamic vinegar, and dried spices and pour it over the roast beef. Cook for exactly 35 minutes. Allow the meat to rest for 20 minutes before carving.
