Spaghetti Squash Bowls

Ingredients

  • 1 spaghetti squash
  • steak
  • mixed veggies
  • 4-5 onions sliced in half moons
  • shredded cheddar cheese
  • scallions

Instructions

  • Microwave the spaghetti squash for 1-2 minutes to soften. Slice in half. Coat with a little olive oil, salt and pepper. Bake flesh side down in a preheated 375°F oven for 60-75 minutes. Set aside to cool. In a saute pan place the. onions in a hot pan with olive oil and a pat of butter. Add a small amount of kosher salt. Cook on low heat until the onions become caramelized. Set aside. Cut any veggies you have in the fridge. You can add corn or beans if you wish, Prepare your steak and slice it into strips big enough to cover the spaghetti squash. To assemble, fork the squash to get the spaghetti strands. Add the chopped veggies over the squash. Place the sliced steak over the veggies. Top with the caramelized onions. Top with shredded cheddar cheese and broil until cheese is melted and bubbly.Top with sliced scallions. Enjoy with a glass of ice tea. Bon Appetit
