Orzo Salad

Ingredients

  • 1/2 box orzo
  • 1/2 red onion finely minced
  • 1/2 can baby corn
  • 1/2 cup mini red peppers
  • 10 cherry tomatoes cut small
  • 1/4 cup fresh parsley minced
  • 1/4 cup fresh dill minced
  • olive oil
  • 1-2 lemon zest and juice
  • kosher salt and pepper
  • feta cheese optional
  • mozzarella pearls optional

Instructions

  • Prepare orzo according to the box directions. While the orzo is cooking prep the veggies. After the pasta is cooked, put it in a bowl. Add the veggies and herbs. Add the salt and pepper. Zest the lemon. Add the olive oil, and juice of the lemon. Check for seasoning. Enjoy with a bbq meal. Bon Appetit
