Watermelon Feta Salad

Ingredients

  • 1 Watermelon
  • 1 8 oz. feta cheese Greek
  • 1/2 cup olive oil
  • 1/2 cup balsamic vinager
  • 2 tbsp. honey
  • 1-2 tsp. kosher salt
  • 1 tsp. black pepper
  • 1 cup mint fresh minced

Instructions

  • Cut the watermelon into 1-2 inch cubes and put into a large bowl. Dice the feta cheese into 1 inch cubes. Add to the watermelon. In a measuring cup add the olive oil, balsamic vinager, honey, salt and pepper. Whisk to combine. Pour over watermelon. Add the mint and toss lightly till combined. Serve as a side with burgers Bon Appetit.
