Sausage Stuffed Peppers

Ingredients

  • 4 peppers red, orange or yellow seeded
  • 1 lb. sweet sausage
  • 1 lb. spicy sausage
  • 1 diced onion
  • 2 garlic cloves minced
  • 1/4 cup white wine
  • 1/4 cup cous cous
  • 1/4 cup tomato sauce
  • salt and pepper
  • olive oil
  • shredded cheese

Instructions

  • In a skillet saute the onion in a small amount of olive oil. Add the sausages and break them up into small pieces.Add the garlic. Cook thoroughly, about 4-5 minutes. Transfer the sausage into a bowl. Add the tomato sauce, cheese and cous cous. Mix together. Stuff into prepared peppers and top with extra cheese. Bake at 350°F for 30 minutes. Enjoy for a great Halloween or simple supper. Bon Appetit.
