Orecchiette with Sausage and Broccoli Rabe

Ingredients

  • 1 lb. sweet sausage
  • 1 lb. spicy sausage
  • 4 garlic cloves minced
  • olive oil
  • 1 lb. broccoli rabe cleaned and chopped in bite size pieces
  • 1 onion chopped
  • 1/4 cup white wine
  • salt and peppper
  • 1/8 tsp. crushed red pepper flakes

Instructions

  • In a skillet saute the onion. Add the sausage and cook thoroughly. Add the garlic and cook another minute. Transfer the sausage to a bowl. Cook the broccoli rabe in the sausage fat. Add the broccoli rabe back and de glaze the pan with the white wine. Prepare the orecchiette according to the directions on the box. Add the cooked pasta to the skillet. Sprinkle with crushed red pepper. Check for seasoning. If the dish is dry add water or chicken stock. Enjoy with a crusty piece of bread. Bon Appetit.
