  1. In an oven proof skillet saute the onions for 5 minutes till translucent. Add the garlic and cook for another minute. Add the cumin, tomato jam, paprika, sugar, tomato paste, salt, pepper and red pepper flakes, Cook for another minute or two. Add the chopped tomatoes, cherry tomatoes and chick peas. Simmer till slightly thickened. Check for seasonings. Make three wells in the sauce. Place the cod on top of the wells. Sprinkle the fish with salt, pepper and z'aatar. Cook in a preheated 375°F oven for 18 minutes. Garnish with parsley and serve with a green veggie and rice. Bon Appetit.
